German Potato Salad

Made 5-11-2019 for Alex's graduation party

Yield:

Ingredients:

  • 2 pounds Yukon gold potatoes or 2.5 lbs potato (red or russet), cut into 1-inch cubes
  • 1/2 pound bacon, chopped into 1-inch strips
  • 3/4 cup minced red onion
  • Less than 1/3 cup apple cider vinegar
  • 1 tablespoon dijon mustard
  • 1 tablespoon minced garlic
  • .5 teaspoon pepper
  • 1.5 teaspoons salt
  • 2 tablespoons chopped fresh parsley
  • 1 1/2 tablespoons chopped fresh chives
  • 2 Tablespoon green onions, chopped

Directions:

  1. Boil potatoes 15 minutes.
  2. Cook bacon.
  3. Cook red onion in bacon grease.
  4. Add apple cider vinger, mustard, garlic, pepper, and salt and boil about 2 minutes to thicken.
  5. Drain potatoes.
  6. Pour the apple cider vinegar mixture.
  7. Add bacon, parsley, chives, and dill.
  8. Serve warm or cold.
