German Potato Salad
Made 5-11-2019 for Alex's graduation party
Yield:
Ingredients:
- 2 pounds Yukon gold potatoes or 2.5 lbs potato (red or russet), cut into 1-inch cubes
 - 1/2 pound bacon, chopped into 1-inch strips
 - 3/4 cup minced red onion
 - Less than 1/3 cup apple cider vinegar
 - 1 tablespoon dijon mustard
 - 1 tablespoon minced garlic
 - .5 teaspoon pepper
 - 1.5 teaspoons salt
 - 2 tablespoons chopped fresh parsley
 - 1 1/2 tablespoons chopped fresh chives
 - 2 Tablespoon green onions, chopped
 
Directions:
- Boil potatoes 15 minutes.
 - Cook bacon.
 - Cook red onion in bacon grease.
 - Add apple cider vinger, mustard, garlic, pepper, and salt and boil about 2 minutes to thicken.
 - Drain potatoes.
 - Pour the apple cider vinegar mixture.
 - Add bacon, parsley, chives, and dill.
 - Serve warm or cold.
